Las Salinas de Janubio is the only operating commercial salt works on the island of Lanzarote. The Salinas used to produce circa 10,000 tons of sea salt per year, for use in the fish industry for preservation and processing. With the invention of the refrigerator however, the production decreased considerably and only reaches  about 2,000 tons per year nowadays. A small part of the production is still sold as high quality table salt and each year, during the Corpus Christi festival in June, dyed salt is traditionally used in the creation of magnificent decorations in the streets and squares of the capital city of Arrecife.

Laid out in a geometric pattern, the Salinas is impressively visual, with each of the salt pans showing different colours depending on the amount of water present in it, allowing for beautiful colour effects.
